J. Burns’ has served Polk County since 1965, and we bake two real gluten-free crusts fresh every day at all three shops, prepared at their own dedicated station. That means we can serve guests with celiac disease, and it means just about anything on our menu can be made gluten-free.

Two Real Gluten-Free Crusts

The rice flour crust comes in 10″ and 14″; the cauliflower crust is 10″. Nearly any topping on our menu works on either one. That includes all nine specialty pies and any build-your-own combination you want.

Rice Flour Crust

Our closest match to the thin, crisp, square-cut pizza J. Burns’ has been known for since 1965. It holds its structure under a full load of toppings and crisps at the edge the way a good thin crust should.

Cauliflower Crust

Lighter, with a little more give and a savory edge from the vegetable base. It is the one to pick if you want the pizza to feel less like bread and more like the toppings.

A Dedicated Gluten-Free Prep Station

This is the part most places gloss over, so we will be plain about it. Our gluten-free crusts are prepared at their own dedicated station, separate from the regular dough. That is what lets us serve guests with celiac disease rather than only guests avoiding gluten by choice.

It also means the gluten-free menu is not a short list. Just about anything we make can be converted to gluten-free. If you do not see what you want, ask, because the answer is usually yes.

Gluten-Free Beyond the Pizza

Pizza is the headline, but it is not the whole menu.

Every sub except the Mamma Mia can be made gluten-free on gluten-free bread. Our salads work too, including the Greek and the Caesar, though it is worth asking about dressings when you order. Garlic knots and the fried sides are the usual exceptions.

The short version: start with what you actually want to eat, then ask us to make it gluten-free. That is a much better order of operations than picking from a list of three things.

Yes. Our gluten-free crusts are prepared at their own dedicated prep station, kept separate from the regular dough. Which gluten-free crust should I get?

What size are the gluten-free pizzas?

The rice flour crust comes in 10″ and 14″. The cauliflower crust is 10″. The 10″ is roughly a personal to small shareable size, between our 7 inch and 12 inch regular pies; the 14″ rice flour feeds a small group.
